FISH CAKES
1 pound white fish (cut into small pieces) - basa
(option add shrimp)
1 egg (lightly beaten)
jalapeno (thinly sliced)
green onion (thinly sliced)
chopped carrot
cilantro (chopped)
basil (chopped)
parsley (chopped)
1 tablespoon fish sauce
lime juice
grated ginger
chopped garlic
chopped bell pepper
zest lime
soy sauce
fish sauce
panko crumbs
mint
shredded cabbage
rice noodles
dip sauce
fish sauce
seasoned rice vinegar
lemon juice
sriracha (hot sauce)
grated ginger
green onions
sugar
place ingredients in food processor pulse until ruff chopped.
place in refrigerator.
pat into cake shape roll in panko.
light oil in pan and fry until golden brown.
i used the cast flat iron (not just for pancakes)
i sliced a zucchini and cooked in on the cast iron till tender then splashed the zucchini with soy sauce.
i mixed a simple fish sauce and marinated sliced cucumber and carrots - i used this sauce in the noodles.
