pear sauce olive oil cake - with nils canned pears





we were contemplating one more cake for the YWP service this weekend... nils had pears from last season and i wanted to do an olive oil cake.... voilà!

ok - i am making this one up so i might have to readjust the wet to dry.... let's see.



3 large eggs room temperature
1 cup  sugar
1/3 cup olive oil
1 cup pear puree
1 Teaspoon Vanilla Extract


1 1/3 Cups Coarse Cornmeal
1 Cup All-purpose Flour
1/2 Teaspoon Salt
2 Teaspoons Baking Powder

WET:
Mix eggs, oil and sugar - blend till smooth. 


Add pear purée and vanilla.


DRY: 
Sift all dry ingredients together.


Add dry to wet but don't over mix.

Bake 350F for 50-60 minutes 
Check at fifty minutes to see if a knife comes clean. Add time if cake is still damp on the middle.
