Lentil Falafel or lentil kibbeh


Never made falafel from scratch before but I have made acaraje - a brasilian bean patty that has dried shrimp stuffed inside after fried.... ok so no chick peas at home but tons of green lentils - and now lentil falafel.


How i did it: 

first soak lentils - i used about 1 1/2 cups of lentil and they puffed up twice as much (no photo). I soaked them for about 10 hours, just because and then drained them and left them covered in the fridge.  then took them out in the afternoon the next day and made the bean balls. 


RECIPE 

1 1/2 cups dried green lentils - soaked (see note above) 
1/2 sweet onion 
4 cloves garlic 
1/2 cup parsley 
1/2 cup cilantro 
1 tsp cumin
1 tsp coriander 
1 tsp salt 
1/2 toasted tapioca flour - Farofa  (can be replaced by a dry binder of some sort.... bread crumbs?

take the soaked lentils and grind them up in a food processor. 
DO NOT ADD WATER IF THE MIX IS TOO DRY - add the onion

add the remaining ingredients and grind till smooth - like the photo below.



TIME TO FRY!

add oil to a skillet and fry on each side - remove and place on paper towel to soak the remaining oil.



DIPPING SAUCE:

1 sm cucumber peeled
1 tbs tahini
2 cloves garlic
1 tsp agave
1 tbs lemon juice
1tsp cider vinegar
1/2 cup olive oil
2 tsp parsley
2 tsp mint 
salt
pepper

everything into the blender and blend till smooth.
