Roasted Cauliflower & Navy Bean Quinoa Salad
RECIPE
1/2 head cauliflower - sit into small pieces
1 can navy beans drained and pat dried
1 cup cooked red quinoa
3 tbs green onion
2 clove garlic
3 tbs parsley
1 lemon zest
1 -2 tbs cider vinegar/ lemon juice
olive oil to taste
salt
peper
oven 350F -
toss & coat the cauliflower in olive oil, lemon zest, salt & pepper
do the same with the beans
put in the hot oven and roast 15 - 20 minutes
the beans will be slightly crunchy - and tasty
once the cauliflower and beans are out of the oven toss with with remaining ingredients and serve.
the beans in the salad holds well for 20 -30 minutes but are still good the next day - just not as crunchy.
