sweet potato pie for daddy































i found a paul deen recipe for old fashion sweet potato pie and adjusted in a little:

2 cups peeled, cooked sweet potatoes                        (i used 2 huge potatoes)
1 1/4 cups sugar                                                          (cut to 1 cup and still a little too sweet)
1/2 stick melted butter                                  (did not melt. put in blendtech w/ warm potatoes)
2 eggs
1 teaspoon vanilla extract or 1 to 2 tablespoons bourbon
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger                           (1/2 tbs fresh) + 1/2 tsp nutmeg
1 cup milk
9-inch unbaked pie crust                                (i baked the crust 15 min)


I placed milk & potatoes in the blendtech and started to get the custard going.
then added butter and then eggs - blended smooth with the remaining ingredients and piled high into the parbaked shell (marie calendars - i am horrible with pie crust.... another skill to master)

when i say piled high i mean it.
the pie took 1 1/2 hours to set at 350F.
I tested with a knife to see if it came out clean.

as you can see the pie settled in the deep dish shell nicely (along with a few stab marks) and i expect to have a beautiful thick sweet potato pie for my old (84) southern gentile father for thanksgiving tonight!
