haricot vert, peas and white bean salad with a tahini lemon dressing

1 cup peas - fresh or frozen

1 cup navy beans

2 cups haircot vert - cut in to manageable size

3-4 green onions - thinly sliced

optional:
• add bacon
• 86 haircot vert add asparagus

Salad Directions:

thaw peas and green beans (haircot vert)
- place vegs in a small bowl pour boiling hot water over the bowl and let sit for a few minutes then drain.

cut green beans and slice of green onions and toss all veggies with desired dressing.

dressing #1:
3 tbs olive oil
1-3 tbs lemon juice
1 tbs pecorino or par cheese
1 tbs water  (or more)
salt and pepper
optional: bacon



dressing #2 VEGAN:
 2 tbs tahini
juice of one lemon
2 cloves garlic
1-2 tsp agave
1 tbs water (or more)
salt and pepper


to make dressing use a blender or hand whip:
add oil, lemon juice and water together and blend, add rest of ingredients and blend vigorously. or add all ingredients to a mason jar and shake vigorously.
