black bean croquettes with tzatziki, sautéed brussels sprouts with pecans & broccoli steamed


Black bean croquettes:
2 12 oz can black beans rinsed, drained, smashed with fork 
1/2 of a large sweet onion, grated
1 cup farofa (or breadcrumbs)
1 egg 
Salt & pepper or adobo
1 1/2 tsp green chili powder (dried green chilies pulverized to powder) 

Mash the beans with a fork - leave lumps 
Grate the onion 
Break the egg add dried ingredients 

Stir or mash up till combined. 

Form patties and roll in crumbs. 

Add olive oil to a cast iron pan and lightly fry till hot & crispy. 

Serve with tzatziki.

tzatziki sauce: 
6 oz Greek yogurt
1/4 c diced cucumber
1 clove garlic
1/2 tsp dried dill 
2-3 mint leaves minced
Salt 
1/4 fresh squeezed lemon juice 
1 tsp olive oil 
1 tsp apple cider vinegar 

Combine and enjoy

Pecan brussel sprouts:

3 -4 handfuls of Brussels sprouts, shredded like cole slaw 
1/4 c chopped pecans
5 cloves garlic minced 
Salt & pepper 
Olive oil or butter 

Medium heat 
Add oil/butter to cast iron pan
Add garlic, stir
Add pecans minute later
The add shredded sprouts
Sauté for 3-5 minutes till hot & wilted

Serve & enjoy
