cauliflower rice risotto

1/2 head cauliflower  
1/2 to taste olive oil  
1/2 med diced onion 
garlic cloves finely chopped
1/2 diced green bell pepper
1/4 cup green onions or leeks

1/2 cup sauted mushrooms
1/3 grated zucchini  

 1/4 cup Coconut cooking cream
1/4 cup chicken broth (or veg)
1/4 fresh parsley chopped 
1/2 cup peas (frozen are good to go)
salt & pepper



dice small onions, garlic, green bell pepper & a pinch of salt - add to saute pan and cook till onions start turning translucent.

 add mushrooms and zucchini and saute another 2-3 minutes. 

add the coconut cream and chicken (or veggie) broth and cook covered for 2-3 minutes.

at the end hit it with salt and pepper to taste.
