Polenta:
4 cup water
1 cup corn meal - fine
2 tsp butter
1/2 tsp veg or chicken bouillon
place all ingredients in to a sauce pot and let stand for 15 -60 minutes depending on the grind.
the thicker the grind of corn meal the longer you need to let it stand - 60 minutes.
after waiting the soaking time place pot on the stove on a high heat.
but be ready no to move from the stove.
with a whisk continually stir the polenta until it thickens by cooking on high for around 10 minutes or until it starts to boil
then turn down the heat to medium and continue stirring another about another 5 minutes.

at this point the polenta is ready to serve it can be held for a few minutes but as it cools the polenta with start to stiffen.
The dinner above was for a post birthday gathering for our lovely friends - this meal served 8 and finished with the Mousse au Citron which is included in the recipes along with the smoked chicken recipe as well as the salads served.
