roasted tomato jam





12 roma tomatoes sliced in half

1 medium sweet onion  cut into quarters

salt & pepper generous amounts

oilve oil

1 tbs sugar



place the cut tomatoes and onions on a baking sheet with parchment, dress the veggies with olive oil and  sprinkle with a generous amounts of salt and pepper.

Place into a preheated oven at 325F convection roast (if you have it) and roast for an hour or so - "until done" the onions with be browned and the tomatoes are caramelized.

once the veggies are done in the oven place them into a blender or food processor, blend them until they are smooth.

Add sugar and pulse then check for salt and pepper and add more if needed.

I just this jam on sandwiches - smoked turkey, bacon, sharp cheddar with the tomato jam on a hearty whole wheat.
