independence beans



1 can (15oz) pinto beans
1 can (15oz) navy beans


1/4 medium onion - diced
6 cloves garlic - minced
1 bell pepper - any color
1/4 sm bunch green onions - minced

2-4 bay leaves
adobo powder
paprika
mexican oregano
veggie bouillon - no liquid added
2 tsp sugar

1/2 -1 cup water - to cover beans


olive oil


rinse beans.
after mincing & dicing add onion, garlic, bell pepper, green onion to a small soup pot with olive oil  and start to saute them. add salt and sweat the veg for a few minutes to wilt.

add beans, bay leaves, adobo powder, paprika, oregano, sugar and bouillon to the pot and simmer for 10-20 minutes.
