paletas - toasted coconut nectarines



I purchased new popsicle molds and I am trying them out with a new paleta recipe that I modified - a lot! and I made one in my husbands favorite CHOCOLATE!

COCO NECTAR POP
1 15 oz can coconut milk
 
1/4 tsp kosher salt

2 ripe nectarines

1/2 tsp vanilla extract (if you have vanilla beans they are even better!)

1/2 cup heavy whipping cream

1/2 cup powder sugar

1/2 cup toasted sweet coconut flakes



there are a few steps.

first, I toasted the sweetened shredded coconut in a dry cast iron pan on low heat.
it took several minutes of shake the pan and flipping the coconut once browning started to occur. once there was a golden brown color in more then half I took the coconut off the heat and placed the shreds in a bowl.


the "custard" was next.
in a blender i placed a can of coconut milk, nectarines vanilla and salt then blended till the nectarines were blended.


next I made a small whipping cream batch with powdered sugar.
I whipped the cream rather stiff - so it sticks to your finger if you try to shake it off.

once the whipped cream was ready I took 3/4 of the custard and toasted coconut then folded it into all of the whipped cream.

I then filled the popsicle molds that are 10 up - I filled 9 with the coconut nectarine and then I made 1 in coconut chocolate.

 into the freezer! i have a fancy zero fridge that has a power freeze button on it.... i pushed it and I am hoping that these paletas are ready for dessert tonight at a friends home....?


CHOCO COCO POP:

i know that leave 1/4 of the custard batch left.

my husband is more of a chocolate lover then fruit (go figure that the brasileiro doesn't love tropical fruits?)

I then took the remaining custard and added coco powder and a bit more sugar.

I didn't measure anything but went by eye and taste just like Aunt Dee Dee had taught years ago.


there was more then a single popsicle amount left. I place the custard in a jar and when the other pops are ready to pull I will make the next batch with the choco coco plus what ever else my heart comes up with.... what's in the house that is ripe
