Cantaloupe Gazpacho


1 1/2 cantaloupes
1 1/2 cucumbers
1/2 cup fresh basil
1/4 cup fresh mint
3-5 cloves garlic
6 tbs olive oil
5 tbs red wine vinegar
3 tbs lemon juice
1/2 - 1 tsp salt

1/2 red bell pepper diced for bits
1/2 cucumber diced for bits

dice the bell pepper & cucumber for tiny bites and hold

take all the ingredients (except the extra bell & cucumber) and blend them till smooth.
I use a blendtec but be mindful of not blending too long which could heat the soup.

once the soup is smooth add the bell pepper & cucumber
 (if you’d like to only have the soup smooth omit the extra bell & cucumber)
