shrimp and pork lettuce wraps, salad & nuoc cham - vietnamese dipping sauce




shrimp & pork filling

2 T olive oil - or peanut or veg
6 garlic cloves minced
2 tbs brown sugar
1 small zucchini grated 
1 lb. ground pork or chicken
2 tsp fish sauce
1 tsp soy sauce)
1/2 lbs shrimp - peeled and chopped into large pieces  
2 tbs green onions
2 tbs cilantro
* thai basil or mint is a great add on if you have it

2 heads of butter lettuce


directions:

place garlic, onion & zucchini in a saute pan and let them saute for 2-3 minutes. 
add the pork to the pan and let it brown. 
stir and once it has browned add the fish & soy sauce and stir again. 
add the shrimp, green onions, and cilantro. 
cook until the shrimp has turned pink. 

serve with cabbage salad and dipping sauce  - see below


nuoc cham - vietnamese dipping sauce

4 tbsp. sugar
2 cloves garlic
2 Thai chiles, stemmed
4 tbsp. fish sauce
2 tbsp.- 4tbsp fresh lime juice 
2 tbsp. finely shredded carrots 
1 tbs cilantro minced
1 tbs green onion
1cup water 


carrot cucumber cabbage salad

1 cup red cabbage shredded 
1 carrot grated 
1/2 english cucumber grated 
1 tbs green onion
1 tbs cilantro
1/2 tsp fish sauce
1/2 lime juiced
