banana bread test




3-4 bananas - ripe the darker the better
3 eggs
1 1/2 cups sugar 
1 tsp molasses
2 tsp vanilla 
3/4 cup oil -  i like 1/2 cup veg oil and 1/4 cup olive or butter

1 3/4 cups all-purpose flour - or replace with GF AP flour 
1 1/2 teaspoon baking soda
1 tsp teaspoon kosher salt


in a mixer beat the bananas still smooth then add the rest of the wet ingredients. beat for a minute to incorporate all liquids and take a spatula and make a fold from the bottom to make sure all the liquids are together.

add the dry ingredients and mix on low to incorporate but do not over beat.

the batter will be very loose.

at this point if you'd like to add chocolate chips, nuts, or anything else your heart desires this is the time. toss the desired items in a small amount of flour to help keep them from sinking to the bottom of the pan.

bake at 350F for 60 minutes.
