TURKEY MEATBALLS WITH TOMATO SAUCE - GF
1 1/2 pounds celery root - peeled and cut into 1-inch cubes and roasted
1 tablespoon olive oil
1 1/2 pounds ground turkey
1/4 cup fresh oregano, roughly chopped
1 bunch parsley -roughly chopped
2 cloves garlic finely grated
2-3 eggs
1 recipe house tomato sauce
red chili flakes to taste
salt and pepper
Season & Roast the diced celeriac root at 400F for 20 minutes. Them let cool.
After cooling place in a food processor and pulse until they resemble bread crumbs- do not over chop.
Transfer the celeriac to a bowl and add the ground turkey, herbs, egg and minced garlic and salt & pepper - combined with hand or spoon till even distribution.
Time to form into ball shapes.
I prefer 1 - 2 oz balls and I love to use a small ice cream scoop to assist in making the meatballs.
Place all the meatballs on a parchment lined baking sheet that will fit into your refrigerator. Chill the meatballs for 30 minutes.
Remove meatballs and place them into a simmering red sauce - make sure the sauce is at a light rolling boil when the balls go in. If the sauce is not hot enough the balls will fall apart.
