Breakfast sandwiches

English muffins 
eggs round cooked
cheddar cheese sliced (used Irish Ched last time and thought a stronger ched would be better)

options: 
sausage patties
bacon
jalapeno onion refried pinto beans
arugula


two methods to make the eggs:
break eggs and whip with water, adobo powder, cracked pepper, salt
1. at this point either bake in a cake pan at 325F for 30 minute or till fully cooked
2. spray with oil a small pyrex or a wide base coffee cup and measure 1/3 cup of the egg mixture into the cup and microwave for aprox 35 sec.
This is super shocking for me - I really don't use microwave ovens but this is a cheat that I came up with while working in a coffee shop. every microwave is different and you will need to experiment with yours to find the right time.


build your egg sandwiches and use a panini press or skillet to toast up the goodies.
