bean muffins with nuts & dried fruit






1 (15-ounce) can no-salt-added beans, drained and rinsed - bean options: cannellini, black, navy

3 large eggs

1/3 cup melted butter or oil

1/3 cup cocoa powder

1/2 teaspoon teaspoon salt

2 teaspoons pure vanilla extract

1/2 cup cane sugar 



optional add ons:

1/2 cup semi-sweet chocolate chips - optional

1/2 cup finely chopped walnut/ pecan/ almonds

1/4 cup dried fruit cherries/ apricots/ ?

1 tbs flax seed & chia seeds

2 tbs almond flour 

2 tbs oats 

in a food processor add drained and rinsed beans and the rest of the ingredients and blend until smooth. 

heat oven 350F 

add batter to muffin cup and bake 30 minutes
