1 lb ground beef
1/2 lb ground pork
2 tsp oil
4 fresh jalapeno peppers, seeded and chopped
4 fresh anaheim peppers, seeded and chopped
4 fresh anaheim peppers, seeded and chopped
1 large onion, chopped
8 cloves garlic, minced1 tsp salt
1/2 cup red wine
1 cup strong brewed coffee
14 oz can diced tomatoes
24 oz crushed tomatoes
2 Tbs tomato paste14 oz broth - chicken or beef
2 tbs brown sugar
3 1/2 tbs chili powder
1 tsp cumin
1 tsp ancho chili powder
1 tsp dreid oregano
4 15 oz cans pinto beans, rinsed and drained
in a large pot or enameled cast iron brown the ground beef and pork.
remove the browned meat and drain off oil.
add the 2 tsp oil to the pot and add the chilies, onion, garlic and salt.
Sweat the veggies and then add the meat back in to the pot and then remaining ingredients.
simmer and reduce for minimum of 1 hour or till the consistency you desire (wet vs firm).
