mad healthy protein cookies



Preheat the oven to 375f convection 

WET
1/2 cup apple sauce 
1/2 cup pumpkin purée
2 egg
1/4 cup sugar
1/4 oil - melted coconut /  olive / your choice 
* special add in jam - i used 1/4 cup of homemade apple-grape-lemon jam

DRY
1 cups oats 
1 cup almond meal
1/4 tsp salt 
1/2 tsp baking powder 
1 tbs flax seed ground 
1 tbs chia seeds 
1 tbs egg white protein

GOODIES 
2 cup nuts chopped (or hammered smaller) your choice almonds, walnuts, pecans, hazelnuts, sunflower seeds, pumpkin seeds
1 cup chocolate chips
1 cup dried fruits: raisins, dates, mangos, peaches, cherries etc
2 tsp match green tea powder


Mix the wet ingredients till combined. 
Add dry into the wet - mix well. 
Add goodies and mix. 
The consistency should be a lot of goodies stuck together by the batter. 

note:
i have started using 1oz scoop to standardize the cooking time.
once i have scooped the ball i lightly press it down to a puck.

12 cookies made from the mix 30 minutes baking cakey consistency 

# 2 experiment 
24 cookies 25 minutes for crispier consistency 

#6 - i think i have it
1 oz cookie scoop
350F (325F on convection)
30 minutes turn off oven and partially open the oven door and let rest for 20 minutes

completely cool before packing into jars.
