olive oil mulberry cake


3/4 cup sugar
2 eggs
1/3 cup olive oil
1 teaspoon vanilla extract 
zest of 1 lemon
1/4 cup sour cream 

1 1/4 cups all-purpose flour 
1 teaspoon baking powder 
1/2 teaspoon salt

 1/4 can of soda water 

1 cup mulberries (or other berries) 
beat sugar and eggs together till ribboning
add the olive oil, vanilla, zest & sour cream

sift the dry ingredients together then add them to the wet in the mixer. 

add the soda water a little at a time to loosen the batter, so you can play with the soda ( i live in a dry climate and the day I made this cake we were under 10% humidity) the soda also helps with making the cake fluffier. 

bake 325F convention bake or 350F bake for 30 minutes
