3 ripe bananas
1 egg
1/2 mayo
1 tsp baking powder
1/2 tsp k salt
1 1/2 cups cake flour
1/2 c almond slivers (or other nut)
1 c (or less) chopped fresh cherries ( or other stone fruit)
in a mixer place bananas and beat them smooth, add the egg and mayo then the sugar.
once the batter is smooth, add the dry ingredients till they come together then fold in the fruit and nuts.
back 325F convection or 350F bake for 20 minutes for cup cakes
and 30-35 minutes for cake pan.
