thankful potato pancakes


batter:

1 1/2 mashed potatoes 
2 eggs 
2-4 4 cloves minced garlic 

salt to taste (depends on your mashed potatoes) 

1 sauteed shallot  
1-2 green onions (some for batter some for topping) 

1/4 cup flour 
1 tsp baking powder 

toppings:
sour cream 
green onions
apple sauce 
tart cherry sauce
cheese 


add the eggs to the mashed potato to loosen then add the rest of the ingredients and combine well. 

heat a cast iron or your favorite pan and add oil then spoon small circles. 
let them brown on one side and flip to brown on the other side. 
ready to serve.
enjoy with your toppings of choice
