chocolate panna cotta



















3 cups liquid (test 2 1/2 cups milk 1/2 cup calf and half)
1/2 cup cocoa powder
1 cup sugar  (i find it a bit too sweet and may reduce) 
1/2 tsp koser salt

2 Tbs gelatin (grass fed beef)
1/2 tsp vanilla


heat the milk up add cocoa, sugar and salt. stir till heats to a scald (180F). 

in a bowl add 1/4 of the liquid and stir in the gelatin and vanilla and whisk the gelatin smooth.  
add remaining liquid and whisk to blend.

chill for 2 hours or till solid
