I came up with the recipe to make banana pudding dairy free for FAKF once she could no longer have dairy.
4 bananas blended smooth - hold till the end
2 cups milk (I used coconut & almond but any alt milk can work... cashew, oat, etc.)

4 eggs beaten
2 tbs corn starch
1/2 cup sugar

1 - 2 tsp vanilla (or to taste)

in a food processor or blender blend the bananas until smooth and hold.
add the corn starch to the beaten eggs and stir until incorporated/ smooth
add everything but the bananas to a saucepot and heat on medium-high using a wire whip blend everything together.
my aunt d taught me a rotating figure 8 helps to catch all the sides.
keep using the whip to stir until bubbles start to form.
turn the heat down and let the pudding thicken - you should see streaks pulling thru the pudding while stiring.
once the pudding has thickened add the banana puree and fold in.
cool and serve.
I continued on to make banana pudding dish with nilla wafers and dairy free whipped cream (freakin' cool whip!).
I used a nice bowl since this was for a party and layered the banana pudding with the wafers, cool whip and fresh bananas slices.
for the decoration on top i crushed some of the wafers to give texture on top of the whipped cream then used whole cookies to add a nice design.... folks loved it and had no clue it was dairy free.
