Greek Chicken Souvlaki Gyro Wrap
- 3 lbs chicken tenders
- 1 batch of the dry rub
- Grill the chicken until done - do not over cook!
- FOR THE CHICKEN DRY RUB
- 4 teaspoons dried Italian season - oregano/parsley/ thyme
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 2 teaspoons salt
- 2 teaspoons cornstarch
- 2 teaspoons chicken-flavored bouillon granules
- 2 teaspoons dried celery flakes
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- FOR THE TZATZIKI SAUCE
- 1 cup plain yogurt - if you'd like it thicker buy greek style or hang yogurt in cheese cloth to remove moisture
- 1/2 cup chopped cucumber
- 1/2 tbsp. chopped shallot or onion
- 2 tbsp chopped fresh mint
- 1 tbsp chopped fresh dill
- Juice from a lemon - or less to taste but i love it tangy
- 1 tbsp. olive oil - or more to taste
- Salt to taste
- FOR THE SANDWICH
- 9 pitas (warmed)
- spoon full of tzatziki
- 3 grilled chicken tenders
- 2 tbsp. chopped tomato
