3 TBS cocoa (unsweetened)
1 C white sugar
1 tsp. baking soda
1/2 - 1 tsp salt
1/2 tsp cinnamon
1/2 tsp cardamon
1 tsp. white vinegar
1 tsp. pure vanilla extract
5 TBS. vegetable oil or Mayo (added moistness) or a combo of both
1 Cup water or soda water (added fluff for the cake)
*1 egg (helps with richness and lift but can be omitted for the vegan factor or no eggs in the house
Preheat oven to 350 degrees F.
Mix first 5 dry ingredients.
Mix first 5 dry ingredients.
Mix the wet ingredients together with vinegar last.
Mix well until smooth.
Bake on middle rack of oven for 35 minutes.
Check with knife to make sure it comes out clean.
Cool. Top with your favorite frosting.
I think of this cake as big hoho/ding dong/ hostest cup cake.
My favorite is sturdy whipping cream beaten with small amount of cream cheese, sugar and vanilla or add in coco powder for a chocolate whipped cream frosting.
