NGREDIENTS
1 cup black beans; cooked, rinsed and drained [236cc]. using pinto 1/4 cup chickpea flour [60 cc]. - don't have using 1/2 cup TVP and 1/2 Farofa
1 egg 1/2 cup onions, minced [120cc] 2 cloves garlic, minced 1 tablespoon cilantro or parsley, chopped [15cc] 1 teaspoon cumin [5cc] 1 teaspoon coriander, ground [5cc] 1/2 teaspoon salt [2.5cc] 1/4 teaspoon black pepper [1.25cc] Optional: 2 tablespoons vegetable oil (Canola, olive oil, etc) [30ml] DIRECTIONS Preheat oven to 375 F or 190 C. Prepare a baking sheet with parchment paper. Optionally, oil it to make a crispier crust. Combine all ingredients except the oil and mash until beans are mostly broken and the ingredients are thoroughly mixed. Stir in the oil if using. The oil helps with texture and crispness but can be left out. Spoon out the mixture on to the baking sheet to form balls about 1 inch in diameter. Try to place them evenly, leaving about 1 inch of space separating each falafel. Bake for 30 minutes. Optionally, you can flip the falafel at the 15 minute mark to ensure they brown evenly. Let cool for 5 minutes before removing from the pan and serving.


USING tVP in the above recipe only from this recipe
  • 1 cup TVP granules (soy protein product)
  • 1 scant cup boiling water
  • 1 tbsp tomato paste
  • 1 19 oz can pinto beans, drained and rinsed
  • Red kidney beans can be substituted
  • 1/4 cup whole wheat bread crumbs
  • 2 cloves garlic, finely minced
  • 1 tsp oregano
  • 2 tbsp tahini paste
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • salt and pepper to taste
  • whole wheat flour for dusting
Pour boiling water over TVP and tomato paste in a bowl.
Stir and let rest for 10 minutes.
In food processor, combine TVP mixture and remaining ingredients except for flour.
Pulse until mixture is almost a puree.
Dust hands with flour and shape mixture into 6 burgers.
Dust them lightly in flour.
Layer the burgers with sheets of waxed paper and refrigerate for a least one hour.
Cook on a grill covered with foil for about 10 minutes on each side or fry in pan at medium high for about 5 minutes each side.
