dumpling pasta aka wooden cutting board noodles



3 eggs beaten 

3 oz milk (can be alt milk or half and half) 

1/2 - 3/4 tsp salt 

3-5 grind pepper black or white 

2 cups flour - but start with 1 1/2 cups flour and add more if needed


instructions

beat the eggs to combine

add milk, salt and pepper

mix in flour starting with 1 1/2 cups and add more if needed. the dough should look like thick cake batter and come off like ribbons from the spatula

let the dough sit for up to 24 hours in the fridge or use right away


cooking instructions 

boil a pot of water with enough salt to taste

when the water is at a rolling boil cut dough into the water

first take a small cutting board  large enough to hold the dough

wet the cutting board and the dough scraper or knife 

place the dough onto the damp board and start cutting then scraping the dough into the boiling water 

(note: the noodles will expand so you can scrap very thin to keep them delicate or larger for heartier)

the noodles will sink to the bottom and float back up

let the noodles float on the top for 3-5 minutes depending on the thickness of the noodle 

remove from water and place into a sauce and cook a few minutes in the sauce



DINE TESTS:

our first time making these we did a twist on a german recipe Halushki which consists of pork, cabbage, noodles and some spices definitely paprika 

what we did: meatball cabbage chicken green chili sauce  

we had frozen meatballs that were onion flavored

made a chicken broth sauce with green chili and added the meatballs to heat thru

took 1/2 head of cabbage and 1 onion and mandolined them into strips and sauteed them till soft with salt & pepper

then everything went into a bowl and voila dinner  


MEATS: if you want to make this a vegetarian 86 meats and add favorite veggies 

meatballs

ham 

left over pork 

sausages - klobasa if going german , any italian if you'd like to go different directions 

smoked chicken

rotisserie chicken

left over beef
