chicken marinades






















YUM YUM  
1/2 cup extra virgin olive oil
1/2 cup balsamic vinegar or other vinegar
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1/8 cup lemon juice
3/4 cup brown sugar
2 tsp dried rosemary
2 tbsp Dijon or Spicy Brown mustard
2 tsp salt
1 tsp ground black pepper
2 tsp garlic powder
 3.5 lb chicken



HAITIAN CHICKEN 

    4 limes, juiced
    2 oranges, juiced
    1/4 cup vegetable oil
    1 tablespoon fresh thyme (I don't like thyme so I used 1 teaspoon of dried Savory)
    1 tablespoon fresh rosemary, minced
    1 tablespoon brown sugar
    4 green onions, minced
    3 garlic cloves, minced
    1 1/2 teaspoons ground allspice
    1 hot pepper, minced
    Salt and pepper to taste
    8 - 10 chicken legs or equal in thighs boneless skinless 



    GREEK CHICKEN MARINADE
    ¼ cup Greek extra virgin olive oil 
    ¼ cup fresh lemon juice
    8 to 12 garlic cloves, minced
    1 ½ tablespoons dried rosemary or dried oregano (or if you like, a bit of each)
    ½ teaspoon ground nutmeg




    PERI PERI MARINADE INGREDIENTS

    1 pound red chilies chopped 
    4 cloves garlic chopped
    1 teaspoon smoked paprika you can sub in other chili powders
    1 tbsp brown sugar
    1/2 cup chopped cilantro
    1/4 cup chopped basil
    1/2 cup olive oil or vegetable oil
    Juice from 1 lemon
    Salt to taste (and black pepper, if desired)

     

    KOREAN / VIETNAMESE GRILLED GOCHUJANG CHICKEN WINGS 
     
    1 tbsp Garlic
    • 1 tbsp Ginger
    • 3 tbsp Honey or brown sugar 
    • 1/4 cup Soy sauce
    • 1 tbsp fish sauce 
     4 tbsp Gochujang

    after grilled add: 
    1 tbsp cilantro chopped 
    • 1 Sesame seeds

     
    LEMON HERB MARINADE

    1/4 cup olive oil, extra virgin
    1/4 cup lemon juice
    1 tbsp dried basil
    1 tbsp dried parsley
    1 tsp salt
    1/2 tsp black pepper
    1/2 tsp garlic powder
    1/2 tsp onion powder
    1/4 tsp crushed red pepper flakes
