HOUSE MADE SAUSAGES

NORTHERN ITALIAN SAUSAGE 

1 lb ground turkey or pork 

2 tsp fennel seeds - grind some seeds to powder added 1/4 tsp to first test

1 tsp caraway seeds

1 tbsp dried parsley

1 tbsp dried basil 

1 tbsp dried orgeano

1/2 tsp garlic powder 

1/4 tsp chili flakes 

1/8 tsp nutmeg 

2 tsp sugar

1 tsp salt & pepper

1-2 tbsp white wine or water (first test 1 tbsp water 1/2 tsp white wine vinegar)

 ____ SAUSAGE BALLS MADE FROM THIS SAUSAGE ________



For the sausage balls:

1 pound breakfast sausage

4 ounces cream cheese, room temperature

1 cup shredded cheddar cheese

1 large egg

1 cup almond flour

1 tablespoon dried minced onions

2 teaspoons baking powder

¼ teaspoon salt

LUCCA STYLE SAUSAGE

1 lb meat - pork (or chicken not traditional)

1/4 tsp nutmeg

1/8 tsp coriander

1/4 tsp garlic powder 

1 tsp salt (sometime i reduce to 1tsp)

2 tsp sugar 

1/4 tsp red chili flake 

1-2 tbs water (or white wine) 

1 - 3  tsp fennel seeds

JALAPENO CHEDDAR BALLS 

1 lb lean ground turkey

2 cloves minced garlic

1/4 cup minced onion

2 Tbs minced jalapeno ( or can of hatch's diced green chilies 4 oz can used less) 

1/4 tsp salt

1 egg

1/2 cup almond flour keto/gf or breadcrumbs 

1/4 cup minced cilantro

1/2 cup shredded cheddar cheese
