Al pastor marinade with pineapple Curtido salad and elote zucchini salad






Al Pastor Meat/Marinade

2-3 pound Pork Loin cut into thin slices - we are using pork cubes 
4 Guajillo Chile boiled, de-seeded, and cleaned.
1 Ancho Chile boiled, de-seeded, and cleaned.
4 cloves of garlic
1/2 onion
1/2 cup of orange juice
3/4 cup of pineapple juice fresh is better
1 Tablespoon of Oregano
1 Tablespoon of Thyme
1 Tablespoon of Pepper
1 Tablespoon of Cumin
1-2 Tablespoons of Paprika
1-2 Tablespoons of Salt
3 Cloves


















Curtido Salad for al pastor
2 cups cabbage  shaved/ shred 
1/4 onion diced 
3 tbs pineapple - crushed or diced
1 tbs cilantro 
2 tsp cider vinegar
1 tsp olive oil 
 salt 
2 drams of fire cider 

mix all together 


ELOTE WITH ZUCCHINI SALAD  
1 zucchini medium diced  
1 ear corn 
1/2 med onion
1-2 cloves garlic crushed 
1 tbs cilantro finely chopped 
sprinkly of adobo powder

 
salt
