I have been fermenting kombucha for several years off and on and it back on!
A friend gave me a baby mother and she has been doing great since June 2020.
Today I am changing things up and increasing one the carafe size from 1/2 gallon sun tea carafe to a 1 1/2 gallon (5.5L) carafe as well as splitting the mothers so i will now be fermenting a total of 2 gallons at a time and now the 1/2 gallon will be dedicated to making kombucha vinegar for making master tonic aka fire cider but split with cider and kombucha.
the ratios and remember to cover with cloth so it can breathe
HALF GALLON
1 mother/ scoby/ mushroom
1/2 gallon carafe (2 quarts/ 1.9L)
1 cups of last batch fermented kombucha
1 1/2 quarts water
1/2 - 3/4 cup white sugar
4 black tea bags/ 2 ice tea bags or 1 tbsp loose tea (never use flavored tea ie ear grey/ etc they can kill the mother)
ONE AND ONE HALF GALLONS
1 1/2 gallon carafe
1 1/4 gallons water (5 + liters)
6 to 9 black tea bags
1 1/2 cups sugar
2 to 2 1/2 cups of last batch fermented kombucha
