salsa fresno aka the orange salsa

 



3 california dried chiles - soaked and drained 
1/2 cup arbol dried chiles 
1/2 cup water 
1/3 cup cider vinegar

2 Roma tomatoes rough chopped 
1/2 yellow onion rough chopped 
1 Tbsp. kosher salt

1 cup vegetable oil

Take the california chilies and soak for 20 minutes in hot water - I boil in the kettle and then let them steep in a bowl. 

add the soaked california chilies and the arbol into a blender along with the water and cider vinegar and blend to incorporate.

add the tomatoes, onion and salt then blend until smooth. 

on a lower speed slowly add the oil to emulsify the sauce. 

done!
