polenta bites dairy & gluten free

2.5 cups water 

3 tbs nutritional yeast 

2 tsp bouillon (consume vegan chicken flavor) 

1 tsp garlic powder

1 tsp onion powder

 

1 cup white cornmeal 


1 small can green chilies 

1/2 onion sauteed 

2 cups fresh spinach sauteed 


combine water and spices in a saucepan together and stir.

turn on medium heat and start streaming in the cornmeal while using a hand wire whip to keep the cornmeal smooth.  

continue to stir the entire time until the corm meal has thickened - you may need to switch to a heatproof spatial since this is a thick polenta meant to cool and eat as a handheld appetizer. 

once the cornmeal has thickened and tasted cooked add the green chilies, onions, and spinach - or any other veg, cheese or meat you'd like.

Pour into a a 9x9 dish lined with parchment and pour the cooked polenta into the dish and let cool. 

after it has cooled you can slice it into squares or any shapes.
