corn bread - more cakey then bready




wet ingredients  

1 c milk.

2 tbs plain yogurt.

1 egg.

1/4 c sugar.

1/4 olive oil.

dry ingredients  

add. 2 tsp baking powder.

1 tsp salt.

1 1/2 c ap flour.

3/4 c corn meal.

1/4 jalapeno of it diced small or more depending on your preference.


instructions

whip wet ingredients together.

stir dry ingredients together and then add handful of shred cheddar and diced jalapenos and fold in.

try not to over stir.

pour the batter into a cast iron pan that has been well oiled.

bake at 400F for 20 minutes.
