muffin muffin and more muffins.... caramelized pear muffins, banana caramelized pear chocolate pecan




 more muffins for services trying to use leftover fruits. 


CARAMELIZED PEACH 

take the fresh peaches and dice them. 

add sugar to the diced peaches and lightly cook them till they slightly cook. 

place the peaches in a calendar to remove the syrup. 

cool the peaches before adding to the batter. 

 


CARM PEAR AND BLUEBERRY 

wet

1 egg

3/4 - 1 cup sugar

1 tsp vanilla 

3 tbs mayo

dry:
 
2 cups flour

2 tsp baking powder

1 tsp salt 

fruit

1 pear diced and simmered in small amount of water (to not scroch) plus tsp of brown sugar

1 cup blue berries

topping:

1/2 cup brown sugar 

healthy pinch of salt 

to make: 

sift dry together

mix wet together 

fold in fruit. 

place in paper lined muffin tin

sprinkle with the brown sugar & salt 

bake 350F 20-25 minutes 


BANANA CARM PEAR CHOCO PECAN: large batch 

3-4 large very ripe bananas
3/4 cup sugar, white or brown
3 large eggs
4 Tbsp. canola or olive oil
1 tsp vanilla  
2 cups all-purpose flour
2 tsp baking soda
1tsp salt
1 ripe pear, roughly chopped and simmered with a small amount of water and 
1 tbs brown usage 
1 cup chopped pecans 
1 cup chocolate chunk
