savory sourdough pancakes with over medium eggs






DRY 
2 cups ap flour

2 tsp baking powder 

1 tsp salt 


WET
2 cups sourdough discard 

2 eggs 

1 1/2 cup milk ( or alt milk or some milk and water i like 1/2 cup yogurt and 1 cup house cashew milk)

1/4 cup oil (olive, corn, butter, etc) 

2 tbs sugar 


SAVORY: 
diced smoked ham

arugula

sharp cheddar cheese 

caramelized pears or pear sauce



MAKE

sift dry

mix wet together then fold in diced ham and cheddar cheese 

heat a skillet or pan with butter and pour the desired amount into a circle then drop the pears and arugula and press lightly 

flip the pancake when you start to see air bubbles come thru 

after flipping the pancake should be cooked when steam starts coming out from the bottom
