dinner tonight - tilapia, napa cabbage with sweet potato noodles, cauliflower sauted in soy ginger


while low in carbs hubby did not approve. i loved it but disliked the lack of colors on the plate.

tilapia - baked in the toaster oven with sauce on top 

1/4 cup tamari 
2 1/2 Tbs brown sugar
1 tsp fresh ginger, grated  
1/2 tsp minced garlic  
2 tsp sesame oil
2 tsp rice vinegar
1/2 tsp Thai Chiles Garlic Paste, Sambal
1 tsp cornstarch

Napa Cabbage with Sweet Potato Noodles 

4 oz noodles - glass noodles/ sweet potato noodles/ soba
1 1/2 lbs napa cabbage 

sauce
2 tbs soy
1 tbs oyster 

stir fry:
1 tbs peanut or plain oil 
 2 green onions chopped 
1 tbs ginger 
1 tbs garlic 
1 tsp lemon or lime juice 


making it: 

place noodles in water that has been boiled and let them sit to soften - the noodles will cook more once placed in the stir fry.

cut napa cabbage in half then into quarters and then bite-sized 

mix sauce in a bowl. 

add to a saute pan oil, green onions, ginger, garlic, lemon juice and heat in the oil. 
add the cabbage and saute for 5 minutes then add the sauce. 

add the noodles and cook on medium for 2-3 minutes or till the cabbage is soft.

Salted cauliflower in w ginger soy sauce



For the Soy-Ginger Sauce


2 teaspoons sesame oil
1 tablespoon minced or grated fresh ginger
2 teaspoons minced garlic (about 2 medium cloves garlic
1/4 cup water
2 tablespoons low sodium soy sauce or regular soy sauce
1 tablespoon red wine vinegar
1 teaspoon brown sugar
1 stem green onion, chopped


Take the Cauliflower and break it up into smaller clumps and then slice in halves - I like bite-sized pieces. 

In a hot wok or cast iron add some oil of choice then add the cauliflower into the pan can cook until slightly tender then add the sauce.  I used a lid to help it steam for a minute then dished out the cauliflower when al dente.
