Lemon Feta turkey meatballs

 









1 lb ground turkey 

1 cup cooked quinoa (I had leftovers can use bread instead)

1/2 cup  almond flour 

1 egg 

1/4 onion minced 

1/2 lemon zested 

Feta cheese crumbles to taste -I used around 1-2 tbsp 

1 tsp adobo powder 

1 tsp kosher salt 

Herbs to taste. 

Herbs from the garden- parsley, mint, fennel 

Dried herbs - thyme, dill 


Mixed altogether 

Make balls same sized - I use a small scoop to keep them even. 

In a cast iron with olive oil on medium heat fry the meat balls for a few minutes or till browned then turn over and cook a few minutes more till cooked thru.
