DINNER TONIGHT : grilled salmon, grilled zucchini, smashed garden cucumber, white sweet potato, & sushi rice

 









G R I L L E D  S A L M O N

1/2 lb salmon

1 lemon 1/4 zested, juice saved for when the salmon gets off the grill

 salt

olive oil 

rub the salmon with olive oil then sprinkle with lemon zest and salt. 

place on preheated grill skin side down. 

salmon cooks quickly so stay by the bbq and look to see as the one side starts to look cooked then flip and watch the next side to pink up. 

I prefer my salmon rather raw on the inside so please cook to how you like

G R I L L E D  Z U C C H I N I 

1 zucchini sliced lengthwise

1 tsp garlic powder 

1- 2 tsp salt 

olive oil 

cut the zucchini lengthwise and pat with a towel. 

brush or pour on the olive oil then add the garlic powder and salt (pepper too if you like.) 

place zucchini on a preheated grill.

cook on one side then flip over. 

depending on the thickness of the zucchini it could be 6-7 minutes on each side

S M A S H E D  C U C U M B E R

1 cucumber english small

1 tsp soy or tamari sauce 

1 tbs rice wine vinegar

1 tsp sesame oil 

1/2 tsp sugar 


mix everything but the cucumbers. 
take the cucumbers a large flat knife and place over the cucumber and smash it with your palm of your hand to break up the cucumber then cut them into smaller pieces. 
cover the cucumbers with the sauce.

S W E E T  P O T A T O 

I regularly bake sweet potatoes ahead of time to use in any meals. 

tonight I am just slicing them and adding a touch of sesame oil and salt.

S U S H I  R I C E 

1 to 1 ratio

rice the rice till the water runs a bit clearer. 

i use a rice cooker. 

add water and salt then the rice and press the white rice button.
