DINNER TONIGHT: grilled skirt steak with chimichurri sauce, punched sweet potatoes, sauted mixed greens with garlic
GRILLED STEAK:
hanger steak
salt
olive oil
garlic paste
Take the steak out to warm towards room temperature.
Rub the steak with the garlic paste, add salt and drizzle with olive oil.
Turn the grill on to warm up to 400F.
Place the steak on and cook the first side for 5 minutes.
Flip and cook opposite side for 3 to 4 minutes.
take off the grill and let it rest.
CHIMICHURRI:
1/2 cup parsley fresh
1/2 cup cilantro fresh
2 tbs oregano fresh
3-4 cloves garlic - smash
1 shallot - dice
1 chili pepper - I used a jalapeno - dice
3/4 cup olive oil
1/3 cup red wine vinegar
1 tsp salt
in a food processor place the olive oil, red wine vinegar, and garlic and blend till the garlic is minced.
add the rest of the ingredients into the food processor and pulse till the onions and herbs are to the desired size - I like mine chopped small more like pesto than pico.
WHITE SWEET POTATOES:
1 medium white sweet potato per person
2 tbs butter
pinch of salt
bake the sweet potatoes - I have been using a toaster oven 450F for 45 minutes and the sweet potatoes turn out perfectly.
After they have cooled, peel the sweet potatoes and cut them into 1" to 1 1/2" rounds, and press with the flat side of a chef knife to give a little smooch to give nooks and crannies to the potato but don't overdo it.
Add butter to a cast iron and melt the butter and add the smashed potatoes and brown on both sides which should take 10-15 minutes of medium-high.
SAUTEED GREENS: use which ever greens you have
Handfuls of Kale, spinach chard, collards
2 cloves garlic smashed
pinch salt
splash of water
we used the greens in the garden, destemmed, ripped into 2".
Add olive oil to a cast iron pan and toss in the smashed garlic - I like the pieces to be large.
Let the garlic saute for a few minutes then add the greens and mix thru with the garlic and oil and saute for a few short minutes.
add a splash of water to the pan and then cover with a lid and take off the heat.
serve.
