keto spinach almond cheese bites










2 lg eggs 
1 cup grated mozzarella 
1/3 cup parmesan 
1/4 cup chopped herbs - oregano, basil, thyme, etc
1 tsp garlic powder 
1 tsp onion powder or dried minced 
1 cup almond flour
2 Tbs tapioca flour 

saute or blanch spinach.

remove excess water by squeezing or putting it into a colander with a weight on it.

once the spinach is cooled and chopped finely and drained add the remaining ingredients and form them into balls. I use a 1 1/2 tbsp scoop.

bake 350F for 25 minutes (depending on ball size)
