sweet potatoes
3 small sweet potatoes
butter for saute pan
salt to taste
prep sweet potatoes in a toaster over 450F bake for 40 minutes.
let them cool. you can keep them cooked on hand a day or two or just make earlier in the day.
dinner time, in a saute pan, add butter and add the sliced sweet potatoes in a medium-high heat and brown on both sides. salt to taste and ready to serve.
green beans
1 handful of green beans per person - if frozen let them thaw out and pat dry
1 tbs butter
1tbs olive oil
sliced shallots - I like a bunch
lemon zest. one or two passes
lemon juice, a squeeze
salt to taste
add the butter and olive oil to the saute pan and melt then add the shallots.
once the shallots starts crisping up add the green beans and saute to heat them up and brown them a little.
add the zest, juice and salt and mix.
ready to serve
