chicken tortilla soup

olive oil in a pot to coat the bottom

 1 onion diced

3 stalks celery diced

4 cloves garlic minced

2-3 carrot diced or baby carrot equivalent 

1/2 serrano pepper (can use whole for spicier)

1 tbs chicken bouillon (better than jar/wet) or equivalent

1-2 liters hot water (I use my electric kettle) 

28 oz / 793g canned tomatoes ( I used whole and broke them up) 

2 bay leaves

1/4 tsp coriander

1/8 tsp cumin

1/2 tsp ancho chili powder 

1 tsp Mexican oregano 

1/2 cup cilantro (or to your taste) 

3 cups rotisserie chicken diced or shredded
