holiday bundt cake recipe trial - no dairy yes eggs



DRY

3 cups flour

3 tsp baking powder

1 tsp salt 

2 tsp ground cinnamon

2 tsp ground ginger 

1 tsp ground cardamon 

1/2 tsp ground cloves 

1/2 tsp ground nutmeg 


WET

1 cup sugar 

2 eggs 

2/3 cup oil 

1/3 cup molasses 

2 tbs vanilla 

1 1/3 cup liquid (water, alt milk, milk, etc) used 1/3 house cashew milk 1 cup soda water 


mix dry together in a bowl.

in a mixer add the sugar and 2 eggs and cream together.  add in the oil and molasses and beat them together. 

add the vanilla and the remaining liquid till combined. 


and in 1/3 increments the dry to the wet and do not over mix.


pour into a greased bundt pan and place into a 325F oven for 50-60 minutes or until a toothpick comes out clean. 

*the lower temp longer cook time should produce a moister cake.


ICING/GLAZE

2 cups powder sugar 

1 tsp vanilla 

1/2 cup water

  1. To make the coffee glaze, melt the butter and milk together and stir in the sugar and instant coffee.
  2. Pour the glaze on top of the cake once cooled.
