DRY
3 cups flour
3 tsp baking powder
1 tsp salt
2 tsp ground cinnamon
2 tsp ground ginger
1 tsp ground cardamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
WET
1 cup sugar
2 eggs
2/3 cup oil
1/3 cup molasses
2 tbs vanilla
1 1/3 cup liquid (water, alt milk, milk, etc) used 1/3 house cashew milk 1 cup soda water
mix dry together in a bowl.
in a mixer add the sugar and 2 eggs and cream together. add in the oil and molasses and beat them together.
add the vanilla and the remaining liquid till combined.
and in 1/3 increments the dry to the wet and do not over mix.
pour into a greased bundt pan and place into a 325F oven for 50-60 minutes or until a toothpick comes out clean.
*the lower temp longer cook time should produce a moister cake.
ICING/GLAZE
2 cups powder sugar
1 tsp vanilla
1/2 cup water
- To make the coffee glaze, melt the butter and milk together and stir in the sugar and instant coffee.
- Pour the glaze on top of the cake once cooled.
