dinner tonight: bean/beef/cheese burritos with a creamy green chili sacue

 











Meat Filling: 

1 onion diced

4-5 cloves of garlic minced

2 lbs meat (used pork and beef mix but could be veggie meat or tvp)

1 tsp salt at the end

I did not measure but the following list is in order of larger to smaller amounts: 

Mexican oregano

garlic powder

onion powder

paprika 

chili powder

epazote 

ancho chile pepper 

1/2 - 3/4 cup water


saute the onions for a few minutes then add the garlic and cook for a minute.

add the beef or veg tvp along with the herbs, spices - saute for a few minutes then add the water and give it a good stir then lower the heat to a low simmer and let the dish slowly reduce the water till it leaves a nice gravy.

Creamy Green chili sauce

quick version:

8oz (1/2 16 oz jar) 505 Southwestern Green Chile Sauce Medium (or your choice of heat)

1 serrano chili deseeded

1 jalapeno chili deseeded

1/2 bunch cilantro

6 cloves garlic

1/2 onion medium

2 tbs chicken or veggie bouillon

(Osem Chicken Consomme Soup & Seasoning Mix is a great veggie bouillon)

1/2 cup water

1/4 cup heavy whipping cream (or half and half, milk, evaporated milk, etc)

2 tbsp butter (or some non-flavored oil) 

2 tbsp AP flour 



from scratch:

10 to 13 tomatillos

6 roasted and peeled Hatch chiles or best chilies you can get

6 Garlic cloves

1 roasted serrano pepper

1/2 bunch cilantro

1/2 medium white or yellow onion

2 Tbs chicken bouillon

1/2 cup water

1/4 Heavy whipping cream

2 Tbs AP flour

2 Tbsp Butter or 2 Tbs margarine


in a blender place all the ingredients but butter, flour, and cream. 

blend everything till smooth then add the cream and combine. 


in a saucepan on medium-high add the butter and flour and whisk together.

continue cooking and whisking and cook for a few minutes to cook the flour then add in the sauce from the blender and let it simmer to thicken to your desired texture. i prefer a bit loose because it will be baked in the oven with the burritos.

MAKE THE BURRITOS: this recipe I filled 8 burritos with 4 heaping tbsp per burrito plus 1 heaping tbsp of bean


8 flour tortillas 

1 can refired beans ( i used Rosarita Refried Beans) 

2 lbs ground beef seasoned

shredded cheese (i used a handful for each burrito plus some for topping) 

prepared green chili cream sauce 


take your tortilla and spread the beans on it

place the shredded cheese on top of the beans 

then spoon on the spiced meat 

roll the burrito tight and place seem down into a baking pan or cast iron that has some sauce on the bottom 

repeat

sauce over all the burritos 

cheese on top 

375F for 20 ish minutes
