Dinner tonight: shrimp tacos with pineapple salsa


 









1 lb shrimp - defrosted & deveined 

1 pack of corn tortillas - 


SHRIMP MARINADE 

2 tbsp olive oil

1 lime - juice & zest

1 tsp salt

3-4 cloves garlic

1/8 tsp paprika

1/8 tsp chipotle chili powder

1/8 tsp chili powder 

1/8 tsp cumin 


PINEAPPLE SALSA 

pineapple - as is or grilled 

red pepper - any colors good  

shallots

cilantro

jalapeño 

lime juice


AVOCADO CREMA - small batch 


1/2 cup sour cream

1/2 lime juiced 

1/2 avocado

pinch of salt to taste 


  
CABBAGE SLAW 

1/4 of cabbage - shredded 

1/2 cup carrot - shredded 

1/2 small onion or shallot 

½ cup cilantro minced 

1/2 jalapeno or serrano minced 

1-2 tsp lime juice 

2 tsp apple cider vinegar

1 tbsp olive oil

tsp kosher salt  


Servied with refied beans and rice
