cheese spreads - pub cheese

 pub cheese is similar to beer cheese but it is not cooked like queso 


large batch pub cheese: 

4 oz of beer 

12 oz cheddar cheese 

8 oz cream cheese 

4 cloves garlic (less if you like)

2 tsp Worcestershire sauce 

2 tsp dry ground mustard 

2 tsp hot sauce (used shiracha) 

1 tsp salt or by taste


take the beer and on medium heat in a pan cook off the alcohol then cool.

in a food processor, add the remaining ingredients but reserve 3-4 oz of the cheddar cheese to add in the end for texture. add the beer next and blend until smooth. 

add the remaining shredded cheese and pulse till the desired texture.
