Salade Niçoise with a yogurt vinaigrette



 vinaigrette: 

3 tbs wine vinegar 

2 tbs lemon juice 

2 tsp dijon 

1/4 cup olive oil 

1 tbs honey 

2 cloves garlic pressed or mortared 

1/2 shallot minced and or green onions 

5 tbs plain yogurt 

salt and pepper to taste 


Potatoes: 

1 potato for 2 servings, increase a potato per amount of servings

olive oil 

parsley 

1 clove garlic pressed

1/2 tsp onion powder or adobo powder

salt to taste


Green Beans: 

green beans 

olive oil 

salt

lemon juice 


Broccoli: 

broccoli cut into skinny spears

olive oil 

salt and pepper to taste 


Greens: 

romain lettuce

spinach 

arugula 

all torn up and dressed with the vinaigrette 


other salad items:
Hard boiled eggs cut to personal choice

green olives 

tomatoes chopped or grape tomatoes
